JILL BENSON
My husband and I are localvores (me more so than my husband) which means that we try to eat only local produce, meat and dairy foods. This also means that I do a lot of canning/preserving in the summer and the last two years have even tried my hand at gardening. My favorite part about eating local is that I spend the summer working hard to preserve delicious food and then get to sit back, relax and enjoy the fruits of my labor all winter long.
When I'm not canning or tending to my plants I enjoy reading, writing and creating things through knitting, sewing and other crafts. I've been knitting for 5 years and there is little I enjoy more in life than watching a bag, scarf, sweater, hat or blanket take shape.
I'm currently a student at Gordon-Conwell Theological Seminary studying Biblical Languages and the Old Testament. I find joy in watching two of my passions mesh in my class work: the scriptures and social justice.
